Welcome to my blog. Take a look around to learn more about my travels and passion for vegetarian food.

An Introduction

An Introduction

I’m little behind on my 2018 New Year’s resolutions but I’ve decided to begin the New Year with an attempt to return to the world of blogging which I have not done in far too many years. For those just joining me, here is what you need to know:

1. I am a travel junkie.
I love everything about travel: finding the deal, the airport, the airplane, getting lost somewhere new, experiencing those magical moments, and even those stress filled days full of bad decisions and irrational behavior (once enough time has passed to look back and laugh at myself). Before I got married at the tender age of 19, I had only left the country once and it was driving across the border to Canada for a weekend so it only barely counts. In the 5 years since then, I have traveled to 5 continents 22 countries and spent time living in China and Uganda.

2. Hedgehogs are my favorite.
Over the last 4 years, I have adopted 3 hedgehogs and fostered many more. I have amassed a large amount of very hedgehog-specific knowledge and love my spikey potatoes quite dearly.

3. I love Food.
Specifically vegetarian food. I firmly believe that experiencing local culture and eating delicious food does not need to involve meat. Since going vegetarian 2 years ago it has become an important part of who I am and what I believe. Cooking is one of my favorite past times and I’m always willing to try out a new recipe.

4. I am a nerd.
In high school, I was on my debate team and the scholastic bowl. I love to read, listen to podcasts, and follow the news (even though sometimes it is painful). Harry Potter is my all time favorite series but I also love historical fiction and dystopian novels.

5. I have the best husband. Maybe this one is cheesy, but I consider myself lucky to have spent the last 5 years married to a man who is always encouraging me to pursue my dreams, even if that means moving to a place in China we had never heard of or staying behind while I lived in Uganda for 2 months.

Well, that is basically me in a nutshell. Thanks for joining me as I document my adventures. Let me know what you want to read about in the future.
